After trying almost every type, unsweetened cashew milk can replace cow’s milk in all recipes.
If you want to make Alfredo, Mac n Cheese, or any white sauce, unsweetened cashew milk is the one type I've found that works properly.
I was a chef for four years and my favourite thing to make was alfredo, took a lot of experimenting to figure out how to replicate it without compromising.
Oat milk is too sweet – had to throw out dinner for 12 because it was just terrible.
Almond milk is too thin, has too much aftertaste
Soy milk doesnt have enough fat
Cashew milk (unsweetened, any other type wont work) will actually reduce over heat the same way as cows milk. You can make a roux using flour and either vegan margarine or even just canola oil if you cant get vegan margarine, then add cashew milk, and let the sauce thicken.
This also works for things like home made caramel if you thicken it before adding it. Really any recipe that calls for milk or cream can be replaced with unsweetened cashew milk.
