Curry paste recipes for the weak

Hi all! I'd like to make some fresh curries, since I've not really been able to find one I can actually eat. Thing is, I really can't do spicy. Like seriously, on a scale from 0 to 10 my spice tolerance is about a 3, everything above that will probably make me cry.

I know how to make the curry paste, I've made them before. I'm just looking for some recipes that will not ask for a gazillion chillies, or even tips to swap them out. I can probably get almost all ingredients, except for fresh lime and curry leaves. Also, coriander tastes like dish soap so unless you can promise that I won't really notice it please leave it out.

I welcome curries from all around the world, whether it's Thai, Indian, Malaysian or something else. No curry is left behind.
