Favorite non-imitation recipes?

I've been a vegan for about a year now, but most of my meals either involve plant based meat substitutes like tofu or seitan, or are just curries and rice. I want to branch out, so what are some recipes you'd recommend that have veggies as the main "focal point" of the dish?

I'm not a picky eater, only restrictions are that I don't care for bananas/plantains and that cilantro tastes like pennies to me.
