Homemade, nut-free vegan butter?

Hi all, looking for some advice. This will be my first Christmas as a vegan and I'm looking forward to trying to veganize some of my old baking staples. From what I can see, it seems that the two ways to replace butter in baking are Miyoko's and Earth Balance sticks. Earth balance isn't available in my area and while Miyoko's is delicious, my mum is allergic and I'd love for her to be able to try some of my creations! I've found recipes like this which look similar to Miyoko's and I'm wondering if I could try it out using seeds instead of nuts. Obviously the appeal of cashews is their relatively neutral flavour, and a lot of seeds have somewhat bitter tastes – I'm wondering if I might be able to do it with sunflower seeds or a mix of sunflower, pumpkin, flax, and hemp seeds. Does anyone have any advice on what might work best?
