Hummus/Charred Eggplant burger
This is something I modified from a recipe I saw on the Tasty App.
Take a can of chickpeas, blend in 2 tbsp olive oil, 4 tbsp tahini, 4 roughly chopped garlic cloves, 1/2 tsp cumin powder, 1 tsp sumac, 1 tsp paprika, 1 tsp freshly ground black pepper, salt to taste, juice of half a lemon, 1 tbsp whole grain mustard, half tsp smoke essence, 1/2 tbsp tomato paste (omit last 3 if you want to keep it orthodox). Blend well. You want to keep it a bit thick since you’ll be making burgers with them.
Now, take an eggplant and charr it over your stove. Rotate it as needed to roast on all sides. Let it get charred all over. It took me maybe 7-8 minutes, but it depends on the strength of the flame and the size of the eggplant. Once it’s fully cooked, let it cool, and scoop out the insides. Add two chopped garlic cloves, juice of a lemon, a tablespoon of olive oil, half a tsp of sumac, half a tsp of chili flakes and mix it all up in a purée.
Now, mix your hummus with your eggplant purée in a 1:1 ratio (you’ll probably have some leftover hummus.) You need a mouldable consistency so it doesn’t fall apart. Add breadcrumbs if it doesn’t stick together. Make into patties, dip into eggs and then breadcrumbs, and then pan fry on both sides till crispy.
Serve on buns with lettuce, tomato, onions and mustard.
