Meals I can make ahead and freeze
So I need some suggestions on good, easy to make meals I can prep and then freeze. I am currently 36 weeks pregnant and I want to start stocking my freezer with things I can just easily heat up for after baby arrives. I am a first time mom and I imagine the recovery period after having a baby is going to leave me exhausted, sore, and unmotivated to actually cook myself a good healthy and nutritional meal. I live far away from any family and haven't made friends in my area yet so I won't have much help and want to be as prepared as possible.
For context, my partner is not vegan and doesn't know how to cook, nor do I really enjoy anything he has tried to cook for me in the past. I am a classically trained chef so I am picky and have high standards when it comes to the meals I eat.
I'm thinking I'd like to make some tofu scramble breakfast burritos but I'm not sure if they would be a soggy, disgusting mess after freezing and reheating.
I also plan to make some casserole type dishes like stuffed shells with marinara sauce, my pregnancy brain has me unable to think about other dishes I could make ahead of time and freeze.
Id love some links to recipes you have had good luck freezing and reheating as well as just some suggestions on things that you think might freeze well.
