My favorite genre of food is “sauce with stuff in it that you serve over rice” – do you have any vegan recipes for saucy things I can serve over rice?

I don't know if there's a word that describes that kind of food, but it's very common in my culture and it usually has meat or milk/cream in it, and I only know very few vegan recipes that could be in that category. In my religion people eat a vegan-like diet for what adds up to roughly half of the year, so I'd like to expand my horizons here a bit. Curries seem to be in that category, if that helps.

One vegan recipe I'm familiar with is mushroom goulash. You sautee onions with carraway seeds, add mushrooms and a few bay leaves and allspice kernels, let the mushrooms release liquid and then reduce it, add some ketchup or tomato sauce, paprika and garlic to taste, and flour mixed with water to make it thick. It's usually served with potatoes, dumplings, or rice. It's really good but I don't want to eat it every day until I am tired of it, lol.
