My Nana’s Noodle Kugel (veganized by Me!)

This recipe is for 1 tray / Time to cook: 1 hour

MAKE VEGAN COTTAGE CHEESE THE DAY BEFORE

Ingredients:

17.6oz Wegmans Amore Pasta, Mafaldinenoodles (wider pasta) – break into 4" pieces

2oz vegan butter (to butter pasta) – (I use EarthBalance)

1 1/2 containers JustEgg (18oz)

2 cups vegan sour cream

2 cups vegan cottage cheese (see below)

1 cup sugar

1 cup oatmilk

1 cup golden raisins

Topping:

2 cups corn flake crumbs

2 cups brown sugar

1 cup vegan butter

Instructions:

Cook noodles until tender.

Drain and add butter,set aside.

Beat together JustEgg, sour cream, cottage cheese, sugar and oatmilk

Add raisins

Add noodles to mixture

Pour into buttered 9×13 baking dish

Topping:

Soften butter and mix together topping ingredients

Sprinkle over Kugel

Bake 350 degrees for 1 hour

Vegan Cottage Cheese: (make this the day before)

Ingredients

1.1 lbs firm tofu

10 tablespoons unsweetened oatmilk yogurt

1/2 tsp salt

2 Tbsps nutritional yeast

2 tsps lemon juice

Preparation

Press the excess water out of the tofu

Crumble up the tofu with your hands, so it resembles the texture of cottage cheese with smaller

and larger pieces.

In a bowl, mix the tofu with the yogurt, salt, nutritional yeast and lemon juice.

Store overnight in the fridge to marinate (You can eat it right away, but it will taste better the next day)
