Need help perfecting my vegetable wellington.
Hello all! I just had my first vegan Thanksgiving, and it was pretty good but I was a little disappointed in my centerpiece, which was a vegetable wellington. It needs something, but I'm not sure what!
I started with a recipe that has always been tried and true in the past for the filling, then added ground pecans and lentils. Then wrapped it up in puff pastry. It baked up really well, but the filling was very earthy, so it needs something…sharp? I'm not sure. Normally the roasted garlic really comes through, but I could barely taste it after everything was baked up. Thoughts?
Filling: 2 carrots, 1 parsnip, 1 head of garlic, roasted with salt and pepper 1 onion, 1 bunch red swiss chard, chopped and sauteed 1 cup lentils, cooked in vegetable broth 1 cup pecans, ground into meal
Wrap up in puff pastry, bake for an hour.
