Nut alternatives

I will admit I am not vegan but I am sort of at a loss. I've recently moved in with my boyfriend who has a severe allergy to all nuts, seeds, coconuts and eggs. He also has an autoimmune disease that does let him eat any dairy or rice.

Up until now, he's had a very bland diet but we are looking to explore more. He isn't sold on the idea of veganism but is willing to try some items to slowly transition. However a lot of the dairy alternatives have nuts in them and we've sort hit a road block.

What are your favourite nut free items or recipes? I just want to be able to make him a nice meal outside of our normal repertoire.
