Simple, Awesome Mexican Black Beans – Vegan, Gluten-free (GF)
1 tbsp (4 tbsp) coconut oil
4 cloves (16 cloves) garlic, finely chopped
1 (4) onion diced
1 large (4 large) jalapeño chili, seeded, chopped
1/2 tsp (2 tsp) ground cumin
2 (8)- 15-oz cans black beans, rinsed, drained
2 cups (8 cups) vegetable broth
Fresh lime juice (you can substitute lemon, but lime is better)
Chopped fresh cilantro
Heat oil in heavy large saucepan over medium-high heat.
Saute the onions.
Add garlic, chili and cumin and sauté 30 seconds.
Add beans and broth and cook 5 minutes, stirring occasionally.
Continue boiling until thick, stirring frequently, about 60+ minutes – let it cook down
Season to taste with lime juice, salt and pepper.
Transfer to bowl.
Sprinkle with cilantro and serve.
