Tip: Add some msg to your cookies/baked desserts
For the last couple years I've been trying to figure out what was wrong with all the cookies I've made. Eventually I made the connection that when I used chia seed flour instead of eggs I'm losing the glutamate that is naturally in the egg offering a small bit of umami.
By replacing between 1/10th-1/20th of your salt with msg by volume you can really make the flavor pop.
