Vegan French Dip – Beef Substitute?

It's cold, wet, and rainy so I want to make some French Dip sandwiches but I'm not sure what the best filling option would be.

A lot of recipes online suggest using portobellos but my boyfriend isn't a fan of mushrooms. Another suggestion is jackfruit but I've never really found a way to use the stuff that works well for me.

I would use vegan cold cuts but I don't believe a beef version exists (at least where I live) so I just wanted to see if anyone here has any other recommendations. TIA! 🙂
