Vegan meal for someone with allergies
Hi everybody! English is not my primary language, so i'm sorry in advance for spelling errors!
In our family it's a custom to have a big party once a year with all the nieces and nephews, and the organisor of the party cooks a big meal for everybody to enjoy. Now the last year this has not been possible for obvious reasons, but maybe this winter we could continue our tradition. And as you have guessed it: I've been appointed to be the organisor this year!
Naturally nearly all nieces and nephews have gotten girlfriends and boyfriends over the years and those are also all invited. One of them is vegan, but i would like to cook something for her to enjoy. The problem is she emailed me her me her list of allergens, and it's a pretty long list:
Nectarine, watermelon, peaches, apple, grapes, lychees, cherries, pears, plums, blackcurrants, apricots, jerusalem artichokes, artichokes, beetroot, asparagus, cauliflower, broccoli, kale, all types of cabbages, peas, all beans except green beans, brussels sprouts, okra, onion, chives, garlic, leek, shallots, mushrooms, fennel, chicory, avocado, cashew nuts, pistachio nuts, all atificial sweeteners, gluten
Sooo, any ideas what i should cook for her? I mean, i could cook her some green beans and potatoes with a glass of almond milk, but that's a bit mean.
