Vegan whipping cream substitute for cake?
Hey fellow vegans, is there a substitute for whipping cream? I wanted to make a mole cake (I think it's from Germany and it's basically a chocolate biscuit cake base with bananas and a vanilla whipped cream with grated chocolate in it and a part of the base is crumbled on top so that it looks like a molehill). In the non vegan version you would use heavy whipping cream and cream stabiliser to make sure it doesn't fall apart. I've also seen recipes using mascarpone or creme fraiché.
I'm not a huge fan of vegan buttercream and think it would be too heavy for this recipe, since it should be more on the fluffier side. Does whipped cold coconut cream work? Or can you recommend any other (natural) options? I would love to hear from you!
