What is an ingredient or technique that changed your cooking game?

I saw something similar on r/cooking recently and I got some good vegan ideas (like black garlic) but I'd be interested to see what vegans think.

For me, it was learning to bloom spices before cooking everything else, or making a roux for any gravy or thick stew.
